Ingredients:

For the cake:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs, at room temperature
  • 3/4 cup vegetable oil
  • 1 cup sour cream
  • 2 teaspoons vanilla extract
  • 8 ounces softened cream cheese

For the icing:

  • 4 ounces cream cheese, at room temperature
  • 4 tablespoons unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (or more, if needed)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. Prepare the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Combine the wet ingredients: In a separate bowl, beat together the eggs, oil, sour cream, vanilla extract, and softened cream cheese until smooth.
  4. Mix wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  5. Bake the cake: Pour the batter into the prepared pan and spread it evenly. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool the cake: Remove the cake from the oven and let it cool completely before frosting.
  7. Make the icing: In a bowl, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, mixing until the frosting is light and fluffy. If needed, add milk one tablespoon at a time until you reach the desired consistency.
  8. Frost the cake: Once the cake has cooled, spread the icing evenly over the top.
  9. Cut and serve: Slice the cake and enjoy the creamy, delicious flavors!
