When I was a kid, my grandma used to surprise us with the most delightful peanut butter treats. They were always rich, creamy, and just sweet enough to satisfy a craving. Inspired by those childhood memories, I created these No-Bake Peanut Butter Cheesecake Balls—a simple yet indulgent dessert that requires no oven time and comes together in minutes!
These bite-sized delights combine the smoothness of cream cheese with the nutty richness of peanut butter, all wrapped up in a soft, melt-in-your-mouth texture. Perfect for gifting, snacking, or a quick dessert fix!
Ingredients
8 oz cream cheese, softened
½ cup creamy peanut butter
½ cup powdered sugar
1 teaspoon vanilla extract
½ cup crushed graham crackers (optional, for texture)
1 cup chocolate chips (for coating, optional)
1 tablespoon coconut oil or shortening (if melting chocolate)

Instructions
Mix the Base: In a medium bowl, beat together the cream cheese, peanut butter, powdered sugar, and vanilla extract until smooth and well combined. If using, fold in the crushed graham crackers for a little texture.
Shape & Chill: Using a small cookie scoop or spoon, roll the mixture into bite-sized balls and place them on a parchment-lined tray. Freeze for at least 30 minutes to firm up.
Optional Chocolate Coating: Melt the chocolate chips with the coconut oil in a microwave-safe bowl, stirring every 20 seconds until smooth.
Dip & Set: Using a fork or toothpick, dip each chilled peanut butter ball into the melted chocolate, tapping off excess. Place back on the parchment paper and refrigerate until the chocolate sets.
Enjoy! Serve chilled or store in an airtight container in the fridge for up to a week.
💡 Tip: For an extra crunch, roll the finished balls in crushed peanuts, cookie crumbs, or drizzle with white chocolate!
