😋🍑 Irresistible Summer Peach Cake
Ingredients:
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
4 large eggs
2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sour cream
1 teaspoon vanilla extract
1 cup diced peaches (fresh or canned)
1/2 cup peach preserves
1 cup powdered sugar
2 tablespoons milk
Directions:
Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
In a large bowl, cream the butter and sugar until light and fluffy.
Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture, alternating with the sour cream, beginning and ending with the dry ingredients.
Stir in the vanilla extract and diced peaches.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
In a small bowl, combine the peach preserves with powdered sugar and milk to make the glaze. Drizzle over the cooled cake.
